Step 1: In a saucepan, bring the water, sugar and lemon zest to a boil.
Step 2: Place the strawberries and lemon juice in a pitcher.
Step 3: Add the hot syrup.
Step 4: Refrigerate until completely chilled, about 4 hours
Step 5: Strain if desired, but do not press.
Step 6: Serve well chilled.
