Ingredients

The ingredients are:
  • 1 kg zucchini (courgettes)
  • 75 to 100 grams grated cheese (your choice of cheese, more maybe used)
  • 3 tablespoons butter (more or less maybe used)
  • 6 tablespoons breadcrumbs (fine, more maybe used)
  • Salt and pepper to taste
  • 1/4 cup parsley, finely chopped (more may be used)
  • TO SERVE
  • Double cream or sour cream (double cream slightly sweetened)

How to Make

  • Step 1: Preheat oven to 180C or 350f.

  • Step 2: Wash and trim the zucchini, still leaving them whole.

  • Step 3: Put in a pan with water to cover, add salt and cook over a medium to moderate heat until just tender ~ remove & drain.

  • Step 4: Cool and cut the zucchini lengthwise into halves.

  • Step 5: Generously rub a casserole dish with butter & sprinkle the butter with breadcrumbs.

  • Step 6: Place a layer of the zucchini, cut side up, on the bottom of the dish & sprinkle with grated cheese, dot generously with butter then sprinkle with parsley and salt and pepper, repeating this procedure until all the zucchini have been used.

  • Step 7: Cover and top the layers with grated cheese and then breadcrumbs and bake in over for 30 minutes.

  • Step 8: Serve with either one of the creams.
