  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1/3 cup milk
  • 1 large egg
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1/2 cup dried cranberries
  • 1/2 cup dried mango cut into small dice
  • 1/2 cup chopped pecans
  • 1/3 cup finely chopped crystallized ginger

How to Make

  • Step 1: Heat oven to 375 degrees and lightly grease 2 cookie sheets. Combine sugars and butter in a bowl and mix until well combined, then add milk and egg and beat until smooth.

  • Step 2: Add flour, baking powder, ground ginger, baking soda and mix well. Stir in dried fruit, nuts, and crystallized ginger and mix gently.

  • Step 3: Drop by rounded teaspoonfuls about 2 inches apart onto cookie sheets. Bake for about 10-12 minutes until lightly browned. Cool on a wire rack.
