Ingredients

The ingredients are:
  • 3 tablespoons olive oil (divided)
  • 1 pound sweet potato (2 potatoes, scrubbed)
  • 1 1/2 pounds skinless salmon fillets
  • Dill (1 small bunch)
  • 8 black peppercorns
  • 1/2 cup cilantro, finely chopped (fresh)
  • 1 lemon, whole (juiced)
  • 3 tablespoons all-purpose flour
  • 2 large eggs, beaten
  • 2 1/4 cups matzo meal (medium matzo meal, can substitute panko, or breadcrumbs)
  • FOR LIME ZA'ATAR YOGURT
  • 16 ounces plain yogurt (2 cups)
  • 1 tablespoon Za'atar
  • 2 limes, whole (zest grated and juiced)

How to Make

  • Step 1: Preheat the oven to 400°F. Rub 1 tablespoon of the oil into the sweet potatoes and season with salt and black pepper, then place them on a baking pan and roast for about 40 minutes to 1 hour, depending on their size, until cooked all the way through. Let cool while you continue preparing for the fishcakes.

  • Step 2: Place the salmon fillets in a wide, shallow pan with the dill and peppercorns, and barely cover with water. Gently poach, uncovered, for 8 to 10 minutes until just cooked through. Lift the salmon from the poaching liquid and flake into a large bowl.

  • Step 3: Halve the cooked sweet potatoes, scoop out the flesh, and add to the fish along with the cilantro and lemon juice. Season well with salt and black pepper and mix together thoroughly. If you have the time, cover and chill the mixture in the fridge for 30 minutes to make the cakes easier to form. Shape the mixture into palm-sized cakes.

  • Step 4: Place the flour, eggs, and matzo meal into separate shallow bowls. Season the flour with salt and black pepper, then coat the cakes in the seasoned flour, dip into the beaten egg, and then roll in the matzo meal. (For extra-crispy cakes, repeat the egg and matzo meal coating for a second time). Place the fishcakes on a parchment-lined tray and refrigerate until you are ready to fry.

  • Step 5: Combine the ingredients for the lime za'atar yogurt. Cover and refrigerate until ready to serve.

  • Step 6: Heat the remaining 2 tablespoons of oil in a wide skillet and fry the fishcakes, in batches, over medium heat until they are golden, about 3 minutes per side. Serve with a generous helping of the yogurt on the side.
