Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breasts (or tenders)
  • Lime leaves (12 leaves)
  • Ginger root (2-inch piece of fresh ginger, peeled and roughly chopped)
  • 3 garlic cloves, peeled and roughly chopped
  • 56 grams coconut oil (1/4 cup, or vegetable oil)
  • 2 limes, whole (zest and juice)
  • 1 tablespoon curry powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup fresh cilantro leaves
  • TO SERVE
  • Lime wedges
  • FOR GARLIC & MANGO MADRAS RELISH
  • 1 mango, whole (ripe, skin and pit removed)
  • 1 red chile, finely diced
  • 1 lime, whole (zested and juiced)
  • 1 tablespoon grated fresh ginger
  • 2 scallions, thinly sliced
  • 1 garlic clove, finely chopped
  • 1/2 teaspoon curry powder (Madras)
  • 1/4 teaspoon smoked paprika
  • 1/4 cup rice wine vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons oil (peanut oil)
  • 1 tablespoon fish sauce
  • Sea salt, to season

How to Make

  • Make sure to pre-soak wooden skewers in water for at least 30 minutes.

  • Step 1: Cut the chicken breasts into 1 1/2-inch chunks.

  • Step 2: Thread a piece of chicken onto a soaked wooden skewer, then a lime leaf and another piece of chicken. Take another wooden skewer and repeat until you have used up all of the chicken. Place the skewers in a large shallow bowl and set aside.

  • Step 3: Place the chopped ginger and garlic, coconut oil, lime zest and juice, curry powder, chili powder, paprika and the cilantro leaves in a food processor. Blend until smooth.

  • Step 4: Pour the curry sauce over the prepared chicken skewers, coating the meat. Cover and set in the refrigerator to marinate for 2 - 4 hours.

  • Step 5: Light the outdoor grill or place a grill pan over medium-high heat. Place the skewers directly on the heat or in the grill pan and cook for 4 minutes on each side, until the chicken is cooked through.

  • Step 6: Serve with lime wedges and Garlic and Mango Madras Relish.

  • TO MAKE THE GARLIC AND MANGO MADRAS RELISH

  • Step 7: Cut the flesh from the mango into 1 1/2-inch cubes and place in a bowl.

  • Step 8: Add the chile, lime zest and juice, ginger, scallions, garlic, curry powder and paprika. Toss to combine.

  • Step 9: In a separate bowl, whisk together the vinegar, sesame oil, peanut oil and fish sauce.

  • Step 10: Pour over the mango mix and stir well to coat.

  • Step 11: Season with salt and chill in the refrigerator before serving.
