Ingredients

The ingredients are:
  • 1/4 cup olive oil (extra virgin)
  • 10 grams oil-packed anchovy fillets (drained, 4 fillets)
  • 2 garlic cloves, minced
  • 1/4 teaspon crushed red pepper
  • 8 cups cauliflower sliced (florets, about 1 large head)
  • 2 tablespoons parsley, minced (fresh flat-leaf)
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon kosher salt

How to Make

  • Step 1: Preheat the oven to 450°.

  • Step 2: Combine the first 4 ingredients in a small skillet over medium heat. Cook for 5 minutes or until the anchovies have broken down. Remove the pan from the heat.

  • Step 3: Spread the cauliflower in a single layer on a baking sheet coated with cooking spray. Coat the cauliflower with cooking spray. Bake at 450° for 10 minutes. Drizzle the oil mixture over the cauliflower; toss to coat.

  • Step 4: Bake at 450° for 25 minutes or until the edges are browned, stirring once after 15 minutes.

  • Step 5: Sprinkle with parley, juice and salt.
