Ingredients

The ingredients are:
  • 1 pound shrimp (cleaned and cut in halves or thirds if the shrimp is large)
  • 1 package (10 ounce) frozen peas (I usually partially cook these in the microwave)
  • 4 tablespoons soy sauce
  • 1 teaspoon oil (olive oil)
  • 1/3 cup chopped onion
  • 2 cups cooked white rice
  • 4 large eggs (or 1 cup Eggbeaters)
  • 1/2 pound andouille sausage (optional) cut in chunks

How to Make

  • Step 1: Coat a wok or large skillet well with cooking spray, and heat until a drop of water sizzles

  • Step 2: Scramble eggs on wok; remove and set aside

  • Step 3: Add oil, onions, peas, shrimp and sausage (if using) to the wok and stir fry until shrimp is pink - approximately 6 minutes

  • Step 4: Add cooked rice, eggs and soy sauce. Stir fry for about 3 minutes
