Ingredients

The ingredients are:
  • 16 ounces cane sugar (also known as dulce de caña, piloncillo or panela, 500 grams)
  • 6 ounces ginger root (fresh, peeled and minced, 150 grams)
  • 3 liters water
  • 1 cinnamon stick (medium stick, optional)
  • 1/2 cup fresh lime juice

How to Make

  • Step 1: Boil the water in a large pan, then add the sugar, ginger, and cinnamon stick (if using). Stir often until the sugar is completely dissolved, then continue boiling for 10 more minutes.

  • Step 2: Using a metal strainer, strain the liquid into a large container where it can cool completely.

  • Step 3: When cool, add the lime juice. Serve in tall ice-filled glasses. Enjoy the Pura Vida!

  • I've been known to add a squirt of Flor de Cana rum per glass to this concoction. Oh, yes!!!
