Ingredients

The ingredients are:
  • 2 large egg yolk (free-range or organic)
  • 1 1/4 cups crème fraîche (150 grams)
  • 1/4 teaspoon Worcestershire sauce (to taste)
  • 1 teaspoon mustard powder (level teaspoon English mustard powder)
  • 100 grams cheddar cheese (freshly grated, 3 1/2 ounces)
  • 4 tablespoons chutney (chili pepper chutney, to taste)
  • 6 ounces sliced bread (4 x 2 cm thick slices of good-quality bread, use sourdough or country style)

How to Make

  • Step 1: Preheat your broiler and get it nice and hot. Whisk the egg yolks with the crème fraîche, Worcestershire, and mustard powder. Stir in the cheese and season with salt and pepper.

  • Step 2: Lightly toast your slices of bread on both sides. Smear a good tablespoon of your chutney on to each slice, right to the edge, followed by a quarter of your rarebit mixture. By spreading it right to the edge, the crust won’t burn. Broil until melted and bubbling. Serve immediately.
