Ingredients

The ingredients are:
  • 400 grams mixed fruit (e.g. sultanas, raisins, currants, 2 1/2 cups
  • 300 ml brewed tea (strong hot, 1 1/4 cups)
  • 250 grams self-rising flour (2 cups)
  • 1 teaspoon allspice
  • 100 grams muscovado sugar (dark brown, 1/2 cup)
  • 1 large egg, beaten
  • 1 tablespoon honey, to glaze

How to Make

  • Step 1: Put the dried fruit in a bowl and pour in the tea, mix in the sugar and stir well to dissolve. Leave to soak for at least 6 hours or overnight.

  • Step 2: After soaking, sift the flour and spice into the soaked fruit (no need to drain the tea) and stir in the egg. Blend well together.

  • Step 3: Preheat the oven to 350°F. Line a loaf pan with parchment paper and pour in the mixture.

  • Step 4: Bake for approximately 1 hour until the cake has risen and cooked through. Leave to cool on a rack and store for 2 days before eating. Warm a little honey to drizzle over the surface of the warm cake for a glazed topping. Serve sliced with butter.
