Ingredients

The ingredients are:
  • 1/2 cup oil
  • 1/2 cup all-purpose flour
  • 2 cups yellow onion, sliced
  • 1/2 cup celery, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne
  • 4 bay leaves
  • 2 tablespoons garlic, chopped
  • 8 cups chicken stock
  • 3 1/2 pounds ham hocks (4 medium-sized smoked ham hocks, I'm totally guessing on the weight)
  • Turnip greens (4 bunches)
  • 1 cup water

How to Make

  • Step 1: In a heavy-bottomed pot, combine the oil and flour over medium heat and stir constantly until the mixture takes on a blond color, about 8 minutes.

  • Step 2: Add the onions, celery, salt, cayenne, bay leaves, garlic, stock and ham hocks.

  • Step 3: Bring to a boil, reduce heat and simmer, uncovered, about 2 hours, until the ham hocks are very tender.

  • Step 4: Add the greens and water, and simmer until greens are tender and the mixture is thick, about 45 minutes, adding some additional stock or water if the mixture looks too dry.

  • Step 5: Remove bay leaves and serve.
