Ingredients

The ingredients are:
  • 1 1/4 pounds tomatoes, chopped (3 medium tomatoes, quartered and roughly chopped)
  • 1 red onion, sliced (halved and thinly sliced)
  • Flat leaf parsley (1 bunch, roughly chopped)
  • 1 lemon, whole (juice of)
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (extra virgin)
  • 2 teaspoons ground sumac
  • 1/2 teaspoon paprika (flakes, optional)
  • Freshly ground black pepper, to taste

How to Make

  • Step 1: Rub and work sumac and the salt into the onion slices with your hands really well (this will soften the onions and help spices infuse in well).

  • Step 2: Stir in the chopped tomatoes, parsley and paprika flakes, combine well.

  • Step 3: Whisk together the extra virgin olive oil and lemon juice and pour over the piyaz salad. Season with more salt (if needed) and freshly ground black pepper.

  • Step 4: Serve Piyaz Salad with feta cheese, olives and/or hummus for a delicious spread.

  • Step 5: Piyaz Salad is also the ultimate accompaniment of Lahmacun and Turkish meatballs, kofte.
