Ingredients

The ingredients are:
  • 1 pound unsalted butter
  • 1 yellow onion, coarsely chopped (small onion)
  • 3 tablespoons garlic, finely chopped
  • 1 teaspoon cardamom
  • 1 teaspoon fenugreek seeds
  • 1 teaspoons ground cumin
  • 1 to 2 tablespoons ginger root, finely chopped
  • 1/4 teaspoon grated nutmeg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground turmeric
  • 5 to 6 basil leaves

How to Make

  • Step 1: Place butter in a medium sauce-pan and melt completely on low heat.

  • Step 2: Simmer without letting it browning, until the surface is completely coated with foam.

  • Step 3: Skim off the foam as it rises to the surface while cooking , until no more remain.

  • Step 4: It should look quite transparent. Now add all the ingredients;onions, garlic basic, ginger cumin, cardamon , oregano, tumeric, nutmeg and basil. Continue cooking on low heat for about 15- 20 mins. Pass it through a cheese cloth or sieve . It is now ready to be used . Store in a tightly covered container for about a month in the fridge.
