Ingredients

The ingredients are:
  • 1/2 pound lean ground beef
  • 2 teaspoons olive oil (or vegetable oil)
  • 1/2 cup minced yellow onion (= about 1 medium onion, minced)
  • 2 cloves garlic, finely minced
  • 1/2 cup diced celery (finely diced, optional)
  • 1/2 cup diced red bell pepper (finely diced, or green sweet peppers, optional)
  • 1 cup sliced mushrooms (finely sliced small mushrooms, optional)
  • 1/2 to 1 cup dry red wine (optional)
  • 1 can (28 ounce) plum tomatoes (with juice)
  • 1 can (6 ounce) tomato paste
  • 1 teaspoon granulated sugar
  • 1 teaspoon oregano (crushed leaf oregano)
  • 1 teaspoon basil
  • 1/4 teaspoon cardamom (optional)
  • Anise seed, pinch of (optional)
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 to 1 teaspoon salt
  • Ground cayenne, to taste (several pinches of)
  • 15 ounces pasta (boiled al dente, about 8 minutes in rapidly boiling salted water)

How to Make

  • Step 1: In large deep skillet or broad-based saucepan, lightly brown beef, crumbling it into very small bits.

  • Step 2: Remove meat with a slotted utensil to a plate lined with paper towel. Clean grease from pan.

  • Step 3: Heat oil briefly in the same pan, add onion and garlic and sauté until just translucent, about 2 minutes.

  • Step 4: Add celery, sweet pepper, and mushrooms if desired and sauté, stirring, for another minute.

  • Step 5: Add tomatoes with their liquid, breaking them up.

  • Step 6: Add tomato paste, sugar, and seasonings with reserved meat.

  • Step 7: Bring to a boil over medium heat, then reduce to low and simmer uncovered, stirring occasionally, about 30 minutes - 1 hour. or until sauce reaches desired thickness.

  • Step 8: Serve over hot cooked pasta.
