Ingredients

The ingredients are:
  • 60 grams butter (2oz)
  • 186 grams caster sugar (3/4 cup/6oz)
  • 3 large eggs, separated
  • 1 teaspoon grated lemon rind
  • 40 grams self-rising flour (1/3 cup / 1&1/3oz)
  • 1/4 cup lemon juice (60ml/2floz)
  • 3/4 cup milk (185ml/6floz)

How to Make

  • Step 1: Preheat the oven to moderate 180c (350f/Gas 4.

  • Step 2: Brush a 4 cup (1 litre) ovenproof dish with melted butter.

  • Step 3: Using an electric beater, beat the butter, sugar, egg yolks and rind in a small bowl until the mixture is light & creamy and transfer to a medium bowl.

  • Step 4: Sift the flour into the bowl and stir with a wooden spoon until combined. Add the lemon juice and milk and stir again to combine.

  • Step 5: Place the eggs whites into a small, clean and dry bowl and beat with electric beaters until firm peaks form.

  • Step 6: Using a large metal spoon to fold the eggs whites into the flour mic and fold unit just combined.

  • Step 7: Spoon the mixture into the prepared dish; Place the dish in a large baking dish with enough water to come 1/3 of the way up the side of the dish and bake for 1 hour.

  • Step 8: Dust with icing sugar and serve immediately.
