Ingredients

The ingredients are:
  • 1 pound dried fruit (mixed, raisins, dates, apricots, dried cranberries, etc.)
  • 1 1/4 cup black tea (brewed, hot)
  • 1 cup packed brown sugar
  • 2 3/4 cup self rising flour
  • 1/2 cup milk
  • 1 large egg, beaten
  • 3 tablespoons orange marmalade
  • 1 teaspoon mixed spice

How to Make

  • Step 1: Place dried fruit (chopped if needed) in a bowl and pour hot tea over. Add brown sugar and mix well. Cover and refrigerate overnight.

  • Step 2: Preheat oven to 325F and coat a 9x5x3 loaf pan with nonstick cooking spray..

  • Step 3: Add flour, milk, egg, marmalade and cinnamon to the fruit/tea mixture and mix until well combined. Pour dough into loaf pan.

  • Step 4: Bake until bread is brown and a toothpick or knife comes out clean, about 2 hours.

  • Step 5: Cool slightly and remove from pan. P;ace on wire rack and cool completely.

  • Step 6: Slice and serve with butter or cream cheese.
