Ingredients

The ingredients are:
  • 2 cups rolled oats
  • 1/2 cup raw sunflower seeds
  • 1 cup sliced almonds ( or your favorite chopped nut)
  • 1/2 cup honey
  • 1/4 cup packed dark brown sugar or 1/4 cup sucanat
  • 2 tablespoons Earth Balance margarine (or 2 tablespoons butter, if you're not dairy free)
  • 2 teaspoons vanilla or 2 teaspoons almond extract
  • 1/2 teaspoon salt
  • 1/2 cup flax seed meal
  • 6 ounces chopped dried fruit

How to Make

  • Step 1: Preheat oven to 350° F and butter an 8x8 or 9x9 inch glass baking dish.

  • Step 2: Spread oats, sunflower seeds and almonds on a cookie sheet to toast in oven for 15 minutes, stirring occasionally.

  • Step 3: Combine honey, brown sugar, butter or margarine, vanilla or almond extract and salt in a medium saucepan over medium heat. Cook until brown sugar has dissolved.

  • Step 4: When oat mixture is done, remove form oven and reduce heat to 300°F Add oat mixture to liquid mixture, add flax meal and dried fruit and stir to combine.

  • Step 5: Put mixture in the buttered baking dish and press to evenly distribute. Bake for 25 minutes. Remove from oven and allow to cool before cutting into squares.

  • Step 6: Store in airtight container for 1 week, or longer in the fridge.
