Ingredients

The ingredients are:
  • 1 cup gluten-free flour blend (see my Gluten Free Flour Blend)
  • 1/2 teaspoon xanthan gum or 1/2 teaspoon guar gum
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3 -4 tablespoons sugar
  • 2 large bananas, mashed
  • Water (optional) or milk, as needed to make it a dough consistency (optional)

How to Make

  • Step 1: Combine together all the ingredients, except for the bananas and water, and mix well.

  • Step 2: Then add in the ripe, well-mashed bananas and mix well. Add a splash or two of water or milk if it doesn't combine well (too dry).

  • Step 3: Drop onto a greased (or parchment paper lined) baking sheet and bake for 12 minutes or until golden brown.
