Ingredients

The ingredients are:
  • 1 cup chopped Bermuda onions
  • 4 tablespoons oil (vegetable oil)
  • 3/4 pounds carrots (4 carrots, peeled and cut in 1-inch slices)
  • 1 1/2 pounds bell peppers (4 peppers, quartered)
  • 3 cups water
  • 3/4 cup tomato sauce
  • 2 teaspoons salt
  • 1/2 teaspoon ground ginger
  • 1 1/2 pounds potatoes (4 potatoes, cut into thick slices)
  • 2 tomatoes, peeled and cut into wedges
  • 2 pound cabbage (1 small cabbage, cut into 1-inch wedges)
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: In a 4-quart saucepan, saute the onion in the oil until soft but not brown.

  • Step 2: Add the carrot, bell pepper, water, tomato sauce, salt, and ginger.

  • Step 3: Cover and cook for 10 minutes.

  • Step 4: Add the potatoes and tomatoes and cook for another 10 minutes.

  • Step 5: Add the cabbage, salt, and pepper and cook until the vegetables are tender.

  • Step 6: Serve hot.
