Ingredients

The ingredients are:
  • FOR PORK
  • 1/4 cup olive oil
  • 1/4 cup red wine
  • 3 garlic cloves, minced
  • 1 bay leaf, crumbled
  • 1/2 tablespoon fresh oregano leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds pork tenderloins (2 tenderloins, 1 pound each)
  • FOR SAUCE
  • 12 ounces Greek yogurt (1 1/2 cups)
  • 2 tablespoons tomato, chopped (seeded)
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons capers, drained and chopped
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon red wine vinegar
  • FOR SANDWICHES
  • 384 grams pita breads (6 pita breads, 7 inch diameter)
  • 1 red onion, haled and sliced
  • Arugula leaves (24 leaves)

How to Make

  • Step 1: To make the pork: combine first 7 ingredients (-pepper) in a large resealable plastic bag, shake to blend and add pork to the marinade, seal bag and chill overnight, turning bag occasionally.

  • Step 2: To make the sauce: In a bowl combine first 7 ingredients (-vinegar); season with salt and pepper. Cover and chill until ready to use (can be made one day ahead)

  • Step 3: Prepare grill to medium heat. Remove pork from bag and grill until thermometer inserted into center of each tenderloin registers 145 degrees F (15-20 minutes). Transfer to work surface and let stand for 10 minutes and then thinly slice into rounds.

  • Step 4: Grill pitas until warmed through and softened (2 minutes per side). Cut pitas in half and fill pita halves with pork, drizzle with sauce and then tuck in onion and arugula. Serve, passing remaining sauce separately.
