Ingredients

The ingredients are:
  • 4 (200 grams) croissants
  • 250 grams cherry tomatoes (trussed, snipped into 4 bunches)
  • 8 large eggs, at room temperature
  • 1/2 cup cream
  • 20 grams butter
  • 2 tablespoons chives, finely chopped
  • 100 grams ham (shaved)

How to Make

  • Step 1: Preheat oven to 170C/150C fan forced.

  • Step 2: Line an oven tray with baking paper and place croissants and tomatoes on prepared tray and spray with oil and bake for 12 minutes or until croissants are heated and tomatoes tender.

  • Step 3: Meanwhile, whisk eggs and cream in a large jug and melt butter in a large frying pan over low heat and add egg mixture, cook, without stirring for 1 minute or until egg begins to set underneath and using a heatproof spatula, cook and push egg from one side of the pan to the other, allowing it to softly set between pushing motions, until eg is almost softly scrambled (this should take about 5 minutes0 and then remove from heat and fold through chives.

  • Step 4: Using a serrated knife, cut croissants in half and place on serving plates and top with ham, then scrambled eggs and serve with tomatoes.
