  • 1 1/2 cup zucchini, shredded
  • 3/4 cup brown sugar
  • 140 grams coconut milk (light, 2/3 cup)
  • 42 grams coconut oil (1/4 cup)
  • 2 large eggs
  • 8 ounces whole wheat flour (2 cups)
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground cinnamon

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: In a bowl combine the zucchini, sugar, coconut milk, coconut oil and eggs.

  • Step 4: Stir wet (zucchini mixture) into the dry ingredients.

  • Step 5: Spoon mixture into a greased loaf pan (8 x 4 inch).

  • Step 6: Bake for 50-55 minutes.
