The ingredients are:
  • 1 pound ground beef
  • 1 tablespoon oil (cooking oil)
  • 1/2 cup carrots, shredded
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • Cayenne pepper to taste
  • 1 can (19 ounce) white kidney beans (drained and rinsed)
  • 1 can (19 ounce) red kidney beans (drained and rinsed)
  • 1 can (28 ounce) diced tomatoes (undrained)
  • 1 can (10 ounce) beef broth
  • 1 can (125 ml) can green chilies (undrained)
  • 1 cup corn niblets (frozen)
  • 1 cup cheddar cheese, shredded

How to Make

  • Step 1: Cook onions, carrots and garlic in cooking oil until tender-crisp.

  • Step 2: In a large deep skillet, brown meat and drain fat.

  • Step 4: Cook and stir 1 minute.

  • Step 5: Add remaining ingredients except for cheese.

  • Step 6: Bring to a boil, reduce heat to low and simmer for 20 minutes, stirring occasionally.
