Ingredients

The ingredients are:
  • 1 1/2 pounds rack of lamb (6-8 ribs or 1 bone-in 3 1/2-pound leg of lamb)
  • Salt to taste
  • 1 teaspoon coarsely ground black pepper (or more)
  • 1 to 2 garlic cloves, peeled and slivered
  • FOR HERB SAUCE
  • 2 tablespoons olive oil
  • 1/2 cup lemon juice
  • 1/4 cup chopped parsley
  • 1 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper
  • 1/4 teaspoon rubbed sage
  • 1/4 teaspoon thyme
  • 1/4 teaspoon crushed rosemary
  • 1/2 teaspoon grated lemon peel
  • 1 clove garlic, crushed

How to Make

  • Step 1: Place lamb on rack in shallow pan. Sprinkle generously with salt and pepper. Insert garlic slivers into top and sides by poking slits into the meat at intervals, not too close to one another.

  • Step 2: Roast according to your usual method. For a leg of lamb, put rack in lower third of oven, preheat to 450', put lamb in oven and immediately lower heat to 325'F. Roast about 1 1/2 hours or until meat thermometer inserted in thickest part reads 135'-140'.

  • Step 3: Combine remaining ingredients and mix well. During last hour of roasting, baste lamb frequently with herb sauce.

  • Step 4: Remove from oven, cover loosely with foil, let stand 15-20 minutes. Remove garlic slivers
