Ingredients

The ingredients are:
  • 1 1/2 pounds lamb shoulder (cubed)
  • 1 medium yellow onion, sliced
  • 2 teaspoons oil (vegetable oil or enough for browning)
  • 1/4 cup raisins (seedless golden)
  • 1/4 cup chopped almonds
  • 1 tablespoon vinegar
  • 1 tablespoon curry powder
  • 1/4 cup mango chutney (or marmalade)
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 cups vegetable stock (or bouillon)
  • 1 cup dry rice

How to Make

  • Step 1: Combine lamb and onion, sauté in small amount of oil over low heat till meat is brown on all sides.

  • Step 2: Add raisins, almonds, vinegar, curry powder, chutney, salt, pepper, and stock.

  • Step 3: Cover and cook over low heat 30 minutes, stirring occasionally.

  • Step 4: Add rice. Cover, cook 20-30 minutes or till rice is done, stirring.

  • Step 5: Serve with condiments as desired.
