Ingredients

The ingredients are:
  • 4 cups chopped kale
  • 1 tablespoon olive oil
  • 2 pounds sweet potatoes (4 medium-sized sweet potatoes)
  • 4 ounces bacon (nitrate-free bacon slices, cooked and crumbled)
  • 4 tablespoons sour cream
  • 4 scallions, thinly sliced

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Place the kale in a large bowl along with olive oil; toss well, coating the the leaves, then transfer to an ungreased baking sheet.

  • Step 3: Poke the sweet potatoes with the tines of a fork and place them on a baking sheet covered with aluminum foil.

  • Step 4: Bake the sweet potatoes for 1 hour, or until they are soft to the touch.

  • Step 5: During the last 5 minutes of baking, place kale in the oven.

  • Step 6: Make a slit in the top of each sweet potato and transfer them to a plate.

  • Step 7: Press the sweet potatoes open and top each with a quarter of the baked kale.

  • Step 8: Next, top each with one quarter of the crumbled bacon, 1 tablespoon of the sour cream, and a quarter of the scallions.

  • Step 9: Serve immediately.
