Ingredients

The ingredients are:
  • 375 grams zucchini (courgettes)
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon dried chilli flakes (more if your palette is spicy)
  • 1 garlic clove, finely chopped
  • 2 spring onions, finely chopped
  • 1/2 teaspoon fresh thyme leaves
  • 1 teaspoon chives, finely diced
  • 1 large egg, lightly beaten
  • 75 ml milk
  • 125 grams all-purpose flour (plain)
  • 1 1/2 teaspoon baking powder
  • FOR TOPPING
  • 4 tablespoons chutney (your favourite tomato chutney or spicy tomato dip, I use my Kasundi recipe)
  • 1 pack (125 grams) mozzarella cheese (cut into small cubes)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Grate the zucchini using the fine shredding plate and transfer to a colander, sprinkle with salt and toss well. Leave for 20 mins then rinse and squeeze them between your hands to extract any water, then blot on kitchen paper to dry.

  • Step 2: (I must say I skipped all this ~ I just shredded zucchini in processor and drained for a few hours, then squeezed any excess juice out.)

  • Step 3: Mix the courgettes with the curry powder, chilli, garlic, spring onions, thyme leaves, chives, salt and plenty of pepper. Stir in the egg and milk, sift in the flour and baking powder, then stir again to combine.

  • Step 4: Lightly oil a non-stick frying pan and fry heaped teaspoon's of the batter for 3 mins on each side. Keep warm while you use up the remaining batter - you should get 18 cakes altogether. (These can be made a day ahead up to this stage then chilled.)

  • Step 5: To serve, heat the oven to 200C/fan and arrange the cakes on a baking sheet and dot with a little tomato chutney, and then a cube of mozzarella.

  • Step 6: Bake in the oven for 8-10 mins until hot and melted then pile onto a platter.
