  • 1 cup granulated sugar
  • 2 tablespoons granulated sugar
  • 1 orange, whole (zested, large orange)
  • 4 large eggs
  • 2 egg yolks
  • 55 grams unsweetened cocoa powder (1/2 cup)
  • Confectioners sugar, for dusting (dash)
  • Candied orange peel (8 pieces)
  • 3 cups vanilla ice cream (to serve)

How to Make

  • Step 1: Preheat the oven to 375°F (190°C).

  • Step 2: Butter and flour a 10-inch (25-cm) round cake pan.

  • Step 3: Line the bottom of the pan with parchment paper, then butter and flour the parchment paper.

  • Step 4: Melt the chocolate over a double boiler.

  • Step 5: Stir the butter into the chocolate to melt, and stir until smooth.

  • Step 6: Remove from the double boiler and whisk the sugar and orange zest into the chocolate mixture.

  • Step 7: Add the eggs and egg yolks and whisk well.

  • Step 8: Sift the cocoa powder over the chocolate mixture and whisk the batter until totally smooth.

  • Step 9: Pour the batter into the pan and bake for approximately 35 to 40 minutes, or until the top has formed a good crust.

  • Step 10: Cool the cake in the pan on a rack for 10 minutes.

  • Step 11: Invert the cake onto a serving platter.

  • Step 12: Dust with confectioners' sugar and serve with candied orange peel and vanilla ice cream.
