Step 1: Wash and dry plums.
Step 2: Combine the water (and extra water) and brown sugar in a small saucepan with a lid. Bring mix to a boil, stirring to dissolve the sugar and add the lemon zest and vanilla, then set the plums in the bottom of the pan, reduce the heat, cover, and simmer for 10 minutes.
Step 3: After 10 minutes, remove the lid and continue simmering for about 5 minutes,
Step 4: Remove plums from liquid and place them in a bowl - then continue to simmer the liquid until it has thickened, turn off the heat to allow liquid to cool.
Step 5: Allow the plums to cool for about 5 minutes & serve them in individual bowls, topped with vanilla ice cream and drizzled with the sugar syrup.
