Ingredients

The ingredients are:
  • FOR SALAD
  • 2 small bags (28 ounces) coleslaw mix (about 12 cups, 14 ounce each bag)
  • 3 1/2 pound cooked rotisserie chicken (finely chopped, about 4 cups)
  • 1 1/2 cups sliced almonds (toasted, or cashews)
  • 180 grams dried cranberries (Orange Cranberries from Trader Joe’s, 1 1/2 cups)
  • 1 small red onion, finely diced
  • 50 grams sesame sticks (about 1 cup, found in the bulk aisle at grocery store - optional)
  • 1 1/2 cups chopped cilantro
  • 1/4 cup sesame seeds (black)
  • Salt & pepper
  • FOR DRESSING
  • 1/2 cup olive oil (extra-virgin)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic, chopped
  • 2 tablespoons honey (or brown sugar)
  • 2 tablespoons minced ginger
  • 1 teaspoon sesame oil (toasted)

How to Make

  • Step 1: Layer the cabbage in a large bowl with chicken, almonds (or cashews, or both), cranberries, red onion, sesame seeds, sesame sticks (optional), and fresh cilantro.

  • Step 2: Combine the olive oil, balsamic vinegar, soy sauce, garlic, honey, ginger, and sesame oil in a blender. Add 2 tablespoons of water. Process until smooth.

  • Step 3: Lightly pour the dressing over the salad mixture and toss; serve.
