  • FOR CRUST
  • 1 1/2 cups graham cracker crumbs (or cookie crumbs)
  • 1/4 cup butter
  • 1 1/2 tablespoon granulated sugar
  • FOR CREAM CHEESE FILLING
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • FOR LEMON FILLING
  • 3/4 cup granulated sugar
  • 3 tablespoon cornstarch
  • Salt, dash
  • 1 1/2 cup water
  • 3 egg yolks
  • 4 tablespoon lemon juice
  • 1 1/2 tablespoon butter

How to Make

  • Step 1: Preheat oven to 350.

  • Step 2: Make the crust by combining the graham cracker or cookie crumbs with melted butter and 1 1/2 tablespoons sugar in small bowl.

  • Step 3: Press the crust mixture into 8x11 pan.

  • Step 4: Prepare the cream cheese filling by mixing cream cheese with 1/4 cup sugar and vanilla and an egg using an electric mixer.

  • Step 5: Mix well until smooth.

  • Step 6: Pour cream cheese filling into crust and bake 30-35 minutes or until center is cooked A knife stuck in the middle of the filling should come out mostly clean.

  • Step 7: As bars cools make the lemon filling by combing 3/4 cup sugar with cornstarch, salt and water in a small saucepan.

  • Step 8: Set mixture over low heat and bring to a simmer, stirring often.

  • Step 9: Whisk in egg yolks, then add lemon juice and butter

  • Step 10: When mixture simmers gain remove it immediately from the heat.

  • Step 11: Pour the lemon filling over the cream cheese filling, and let the bars cool.

  • Step 12: When cool, chill bars in the refrigerator for several hours before serving.

  • Step 13: Cut bars into size wish.
