  • 1 cup brown sugar
  • 1 cup granulated sugar (white)
  • 3 large eggs, room temperature
  • 3/4 cup unsalted butter (room temperature)
  • 1 teaspoon pure almond extract
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1 bag (12 ounce) fresh cranberries (or frozen and thawed)
  • 1 cup sliced almonds

How to Make

  • Step 1: Preheat oven to 350F; butter a 9x13 baking pan. Do not spray...for some reason it sticks.

  • Step 2: In large mixing bowl, beat sugar and eggs for 5 minutes with an electric mixer on medium.

  • Step 3: The volume of mixture will increase by almost half and will be thickened.

  • Step 4: Add butter and extracts and beat for 2 more minutes.

  • Step 5: Slowly add flour and beat until combined.

  • Step 6: Fold in cranberries; batter will be thick.

  • Step 7: Using a spatula, smooth batter into prepared pan.

  • Step 8: Sprinkle almonds evenly over top

  • Step 9: Bake for 40-50 minutes until toothpick comes out clean.
