  • 8 cups mixed salad greens
  • 2 apples, diced (medium red apples)
  • 1/2 cup crumbled blue cheese
  • 40 grams dried cranberries (1/3 cup)
  • 1/3 cup walnuts (toasted, coarsely chopped)
  • 1/4 cup green onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons cranberry juice concentrate (bottled or frozen & thawed)
  • 1 tablespoon white wine vinegar
  • Salt & pepper, dash
