Ingredients

The ingredients are:
  • 168 grams bread, cubed (white or wheat bread, cut into 1″ pieces, 6 cups)
  • 114 grams dried cranberries (or raisins, 3/4 cup)
  • 2 cups half & half
  • 1 can (15 ounce) pumpkin (not pumpkin pie mix or puree)
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup packed brown sugar
  • 1 teaspoon ground cinnamon (See Note)
  • 1/2 teaspoon ground nutmeg (See Note)
  • 1/4 teaspoon ground ginger (See Note)
  • 1/4 teaspoon ground cloves (See Note)
  • 1/4 teaspoon salt
  • 1/2 cup pecans, chopped
  • Maple syrup, to drizzle on top (about 3-4 tbsp)

How to Make

  • Step 1: Preheat oven to 350F. Grease a 9x9-in baking pan & set aside.

  • Step 2: Combine cubed bread & dried cranberries in lrg bowl. Set aside.

  • Step 3: In a med size bowl, combine Half & Half, pumpkin, eggs, vanilla extract, brown sugar, spices & salt. Blend everything well. Pour mixture over the bread/cranberry mixture & stir, coating all the bread cubes. Spoon this mixture into your greased baking pan & let stand for 10 min.

  • Step 4: Bake for 30-35 min or until a toothpick inserted in center comes out clean. Sprinkle chopped pecans over mixture during the last 10-15 min of baking time.

  • Step 5: When bread pudding is done, remove from oven & drizzle the top w/maple syrup. Let cool 10 min & cut into 9 squares. Serve warm w/more maple syrup drizzled very lightly over each piece as desired.

  • NOTE - It occurred to me that the 4 spice combo listed among the ingredients is very typical of pumpkin pie spice used by many cooks. If you're 1 of those cooks, feel free to use 2 tsp of pumpkin pie spice instead of the spice combo as listed.
