Ingredients

The ingredients are:
  • 256 grams sauerkraut (drained and rinsed, 1 cup)
  • 8 ounces cream cheese (softened, 1 cup)
  • 1 cup cheddar cheese, grated (sharp, white)
  • 1/4 to 2/3 cup sour cream
  • 1/2 to 1 tablespoon prepared horseradish (sauce)
  • 1/2 to 1 teaspoon caraway seeds (optional)
  • Kosher salt, to taste
  • Pepper, to taste
  • Garnish
  • Chopped chives, optional

How to Make

  • Step 1: Sauerkraut ... First, I prefer a fresh deli sauerkraut vs that in a can or jar; but, either works. I also like to drain, and lightly rinse before using. It is very important to drain well. After rinsing, I often let it set on a paper towel for 5 minutes; just to make sure there is no extra moisture.

  • Step 2: Dip ... Add the sauerkraut to the food processor; and pulse a few times until smooth. If needed, you can add a little water (1-2 teaspoons of water); just until you get a smooth consistency.

  • Step 3: Then, add the cream cheese, cheddar, sour cream (start with 1/4 cup), horseradish (start with 1/2 tablespoon); and, puree until smooth and creamy. Season with salt and pepper; and, if you want it more creamy - add a bit more sour cream. It's really comes down to taste. The same goes for the horseradish; if you like a bit more spice, and a bit more.

  • Step 4: Finish ... Add the caraway seeds (optional), pulse until combined; then, transfer to a bowl, and cover with plastic wrap. At least a couple of hours in the refrigerator; but, overnight is even better.

  • Step 5: Serve and ENJOY! ... Garnish with chopped chives; and, serve with your favorite dippers. As mentioned - My Brat Burger Bites Recipe#25163, crackers, pretzels, bread cubes, vegetables, small boiled new potatoes, bites of bratwurst; even those tater tots are delicious!
