Ingredients

The ingredients are:
  • 1 1/2 pounds green beans (fresh)
  • 1/2 cup balsamic vinegar
  • 8 ounces dried tomatoes (1/2 cup, I've successfully substituted fresh grape tomatoes for the reason that some in my family don't care for the dried)
  • 6 slices (6 ounces) bacon
  • 4 tablespoons minced shallot
  • 2 tablespoons brown sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

How to Make

  • Step 1: Wash beans, trim ends, and remove strings.

  • Step 2: Cook beans in boiling water to cover 10 minutes or until crisp-tender. Drain and set aside.

  • Step 3: Bring vinegar to a boil in a saucepan; remove from heat. Add tomatoes; let stand 10 minutes. Drain tomatoes, reserving vinegar. Coarsely chop tomatoes.

  • Step 4: Cook bacon in a large skillet over medium heat until crisp; remove bacon, reserving 2 tablespoon drippings in skillet. Crumble bacon, and set aside.

  • Step 5: Cook shallots in reserved bacon drippings over medium heat, stirring constantly, until tender.

  • Step 6: Add reserved vinegar, chopped tomato, brown sugar, salt, and pepper. Cook over low heat until sugar melts, stirring occasionally.

  • Step 7: Add beans to skillet, and toss gently. cook just until thoroughly heated. Spoon bean mixture into a serving bowl; sprinkle with bacon.
