Ingredients

The ingredients are:
  • 16 ounces dry black-eyed peas (dry, 3 cups)
  • 8 cups water
  • 3 pounds smoked ham hocks
  • 1 can (16 ounce) stewed tomatoes (undrained)
  • 1 1/4 cups chopped yellow onion
  • 1 cup chopped green bell pepper
  • 2 tablespoons brown sugar
  • 1 teaspoon salt

How to Make

  • Step 1: Sort and wash peas; place in a large Dutch oven. Cover with water 2 inches above peas; let soak 8 hours. Drain peas, and return to the Dutch oven.

  • Step 2: Add 8 cups water and remaining ingredients. Bring to a boil; cover, reduce heat, and simmer 1 1/2 hours or until peas are tender, stirring occasionally.

  • Step 3: Remove ham hocks. Cut ham from ham hocks, and chop meat. Return meat to the peas.
