Step 1: Marinade ... Add everything to a small bowl or measuring cup; and, mix to combine. Lay the swordfish steaks in a small baking dish; and, brush/spoon the marinade over both sides of the steaks. Cover with plastic wrap; and marinate, at least 30 minutes, up to 1 hour.
Step 2: Rice ... As mentioned, I like to serve this with my 'Minted Herb Feta Rice - Recipe #24992;' which it isn't necessary; but, I happen to like it. So, if you plan to serve it with the rice, you need to start that now; as, it will take longer than the fish.
Step 3: Fish ... Once the fish has marinated, remove from the refrigerator; and, set them on the counter for 15 minutes to take the chill off. You never want to cook with cold seafood.
Step 4: Grill/Saute ... Whether you use an outdoor grill, grill pan; or a cast iron skillet; you want to bring it up to medium high-high heat - then, add the remaining oil. Season the steaks with salt and pepper on the first side; and place seasoned side down. Then, season the second side. Cook the steaks for 3-4 minutes on the first side until you get a nice sear; flip, and cook another 3-4 minutes. You want the fish firm, but NOT overcooked, so keep an eye on it.
Step 5: Serve and ENJOY! ... Don't forget to garnish the steaks with the scallions. The swordfish is good served on it's own; but, as mentioned, I love to serve it with my 'Minted Herb Feta Rice.' Add a tomato or green salad on the side - for a quick and easy dinner.
