Ingredients

The ingredients are:
  • 1 large onion, sliced
  • 4 boneless/skinless chicken breasts or 4-6 chicken legs/thighs, skinned
  • 3-4 tablespoons butter or margarine, melted
  • Garlic powder
  • Cajun seasoning
  • Salt/pepper to taste
  • 1 tablespoon cornstarch or arrowroot
  • 1/4 cup cold water
  • Additional salt/pepper/garlic/seasoning

How to Make

  • Step 1: Place the onion slices in the bottom of a crockpot. Place the chicken on top of the slices. Drizzle butter over the chicken.

  • Step 2: Shake the seasonings over the chicken (except for the cornstarch and 1/4 C water). Cook on low about 8 hours, or high 4 hours (if your chicken breasts are smaller, cook for less time).

  • Step 3: Remove chicken from slow cooker, de-bone (if necessary) and shred; place in a serving dish.

  • Step 4: Strain the juices into a small pot, bring to a simmer. Combine the cornstarch and cold water and add to the juices to thicken, simmering for a few minutes.

  • Step 5: Pour the gravy over the shredded chicken and mix well. Serve over noodles, rice or mashed potatoes.
