Ingredients

The ingredients are:
  • 3 pounds bone-in skin-on chicken thighs
  • 1/3 cup chickpea flour
  • 1/4 cup rice flour
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons cornmeal
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 cup salad dressing (Italian Salad Dressing, ,I use Kraft)

How to Make

  • Step 1: Place the chicken pieces in a large bowl and pour the Italian Salad Dressing over the chicken; rub the dressing onto the chicken pieces making sure they are all coated and place in refrigerator for 4 to 6 hours.

  • Step 2: Mix the remaining ingredients together in a large plastic bag and shake to mix until blended.

  • Step 3: Add the chicken pieces a few at a time and toss to coat; shake off excess flour mixture and place on a lightly greased, rimmed baking sheet.

  • Step 4: Cook in a 350 degree Fahrenheit oven for 50 to 60 minutes or until cooked through and juices run clear when poked with a fork. (This will depend on how thick the pieces are)

  • Step 5: Enjoy!
