  • 4 green onions (including tops), finely minced
  • 1/2 cup Parmesan cheese, freshly grated
  • 6 tablespoons mayonnaise
  • 24 slices (1/2 pound) rye bread (about 1/2 pound cocktail-size rye bread or 1/4-inch-thick baguette slices)

How to Make

  • Step 1: Stir together onions, cheese, and 6 tablespoons of the mayonnaise until well blended; add more mayonnaise, if necessary, to give mixture a spreading consistency.

  • Step 2: Arrange bread slices side-by-side in a 10 x 15-inch rimmed baking pan. Broil about 6-inches below heat until bread is toasted.

  • Step 3: Turn slices over and spread cheese mixture until untoasted side. Broil about 6-inches below heat until bubbly and lightly browned, about 3 minutes.

  • Step 4: Makes 2 dozen appetizers. The serving size above of 10-16 is a guesstimate.
