  • 1 package (350 gram) mung bean sprouts (fresh, 0.8 pounds)
  • 1 teaspoon salt
  • 6 cups water (boiling water)
  • FOR SEASONING
  • 1 teaspoon green onion, finely chopped (green parts)
  • 1/2 teaspoon garlic, minced
  • 1/2 teaspoon fine sea salt (to taste)
  • 1 teaspoon sesame seeds (toasted)
  • 1 tablespoon toasted sesame oil
  • 1/4 teaspoon chili oil (optional)

How to Make

  • Step 1: Rinse the mung bean sprouts in cold water and pick out any bad ones.

  • Step 2: Place the water and salt in a large pot. Bring to a boil.

  • Step 3: Meanwhile, prepare the seasoning by combining all ingredients in a small bowl - stirring until well mixed.

  • Step 4: Once the water is boiling, plunge the mung bean sprouts into the pot and cook for 1 minute.

  • Step 5: Drain the bean sprouts in a colander and run cold water on them for 1-2 minutes to stop the cooking.

  • Step 6: Leave in the colander to drain for at least 5 minutes. Put the bean sprouts into a mixing bowl and add the seasoning mixture. Toss until well combined.
