Step 1: Preheat your oven to 350 degrees.
Step 2: Heat olive oil in a large skillet. When hot, add onions. When onions start to appear translucent, add mushrooms. Season with salt and pepper and saute until browned.
Step 3: While mushrooms and onions are browning, combine spinach, feta cheese, parmesan, bacon and cottage cheese. In a separate bowl, combine eggs and half and half.
Step 4: Add browned onions and mushrooms to the spinach mixture and stir. Add the cream and eggs, mix well. Spray a pie plate with pan spray, pour spinach mixture into pie plate. Bake in preheated oven for 45 minutes. Cut into wedges and serve.
