Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 small yellow onion, fine dice
  • 8 ounces fresh mushrooms, sliced
  • Salt, pepper to taste
  • 1 (10 ounce) box frozen spinach, drained well
  • 4 large eggs
  • 1 cup half and half, can sub milk
  • 3 ounces feta cheese, crumbled
  • 1/4 cup grated parmesan
  • 1/2 pound bacon, cooked and crumbled
  • 1/2 cup cottage cheese
  • Pan spray

How to Make

  • Step 1: Preheat your oven to 350 degrees.

  • Step 2: Heat olive oil in a large skillet. When hot, add onions. When onions start to appear translucent, add mushrooms. Season with salt and pepper and saute until browned.

  • Step 3: While mushrooms and onions are browning, combine spinach, feta cheese, parmesan, bacon and cottage cheese. In a separate bowl, combine eggs and half and half.

  • Step 4: Add browned onions and mushrooms to the spinach mixture and stir. Add the cream and eggs, mix well. Spray a pie plate with pan spray, pour spinach mixture into pie plate. Bake in preheated oven for 45 minutes. Cut into wedges and serve.
