  • The following recipe serves 6-24 people.

Ingredients

The ingredients are:
  • FOR SKEWERS
  • 1 pound fresh figs (approximately 8-9 fresh figs, stems trimmed and cut in half)
  • 6 ounces Jarlsberg cheese (cut in 3/4" cubes)
  • 1/2 to 3/4 pounds iceberg lettuce (1 head weighs approximately 1 lb, cut into 1" cubes)
  • 8 ounces sliced bread (cubed, 8 one inch thick french bread slices, crusts trimmed and cut 1" cubes, 2 cups)
  • FOR BUTTER SAUCE
  • 4 tablespoons unsalted butter
  • 4 tablespoons olive oil
  • 1 teaspoon orange zest
  • 1 tablespoon fresh rosemary, minced
  • 2 teaspoons fresh thyme, minced
  • 1 teaspoon fresh oregano, minced
  • 1/2 teaspoon kosher salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • FOR BALSAMIC SAUCE and GARNISH
  • 2/3 cup balsamic vinegar
  • 2 teaspoons honey
  • 2 tablespoons fresh orange juice
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Bread Cubes ... Cut off the crusts; then, cut your slices into cubes, place on a plate ... and, let them dry on the counter over night, or up to 24 hrs, covered loosely with a light towel. They will be stale; but, still soft enough to skewer.

  • Step 2: Balsamic Sauce ... Add the balsamic and honey to a small pot; then, reduce 5 minutes on medium low heat. Finish by adding the fresh orange juice; then, set to the side. I usually serve this chilled or at room temperature.

  • Step 3: Butter Sauce ... Add the butter, olive oil, rosemary, thyme, salt, and pepper to a small bowl; and, microwave on medium heat for 1-1 1/2 minutes, until the butter is melted. Finish by adding the orange zest.

  • Step 4: Skewers ... If using wooden skewers on an open charcoal or gas grill; you would normally soak them for 10-15 minutes so they don't burn. These are so quick cooking; I don't find it necessary.

  • Step 5: These can be skewered anyway you like; and, depending on the size of the skewer - you can make anywhere from 6-24 skewers. Simply alternate figs (skewered from one end to another so they flat), cheese, bread, and lettuce cubes. Make sure NOT to push the ingredients too close together. You want each piece to cook evenly. Then, brush the skewers with the butter sauce; then, grill, flipping often. Medium high grill, until the cheese softens, the bread crisps up; and, the figs start to soften.

  • Step 6: Serve and ENJOY! ... Simply drizzle the balsamic sauce over each skewer. You can serve it chilled or room temperature. As mentioned, it is a great appetizer or side dish.
