Step 1: Base ... Add the tomato paste, beer, broth, and both seasonings to your crock pot; and, mix well. Then, add your onions, garlic, and beef; and, stir just until they are combined.
Step 2: Mushrooms ... To make this easy; I usually just buy the pint of pre-sliced mushrooms. They are already cleaned, trimmed and sliced; but, you can also use whole mushrooms too; and, either slice or cut in half (in half if they are small). Add the mushrooms on top; but, DO NOT mix them with the rest of the ingredients.
Step 3: Cook ... Cover and cook 5-6 hours on high heat; or 6-8 hours on low heat. Remember, all crock pots cook differently. About 1 hour before it is done; stir everything together - remember, we didn't stir the mushrooms in before. Check for seasoning ... you may want to add a bit more salt or pepper; only if needed. I used my oval crock pot for this recipe and cooked 5 hours; then, stirred everything together the last hour. Mine took a total of 6 1/2 hrs. So, just check ... crock pots all cook differently.
Step 4: Finish ... Once the beef is tender; add the corn starch and water together in a small cup; and slowly add to the pot. Depending on how thick you want it; you can add all of it; or, just half of it. I usually add most of it. It will thicken up in just a couple of minutes. Add the peas; and, stir until combined. Cover and turn off the heat. Let it rest a good 10 minutes, just to heat everything through.
Step 5: Bread ... Brush the bread with either a garlic oil or plain olive oil; and, broil or grill, just until lightly golden brown.
Step 6: Serve and ENJOY! ... Spoon the the beef over the grilled bread, and garnish with the parsley. It is true comfort food. Serve with a salad or tomato slices.
