Ingredients

The ingredients are:
  • 10 pounds cucumbers, sliced (20 medium sized cucumbers sliced into 1/8-1/4 inch slices)
  • 8 medium yellow onions, thinly sliced
  • 2 green bell peppers, diced
  • 1/4 cup pickling salt
  • FOR THE BRINE
  • 5 cups granulated sugar
  • 5 cups vinegar
  • 1 teaspoon turmeric
  • 1 teaspoon celery seed
  • 1 teaspoon cloves
  • 2 teaspoons mustard seed

How to Make

  • Step 1: In food grade container add sliced cucumbers,onions and diced bell peppers sprinkle salt mix and sit for 3 hours, I prefer to sit overnight.

  • Step 2: Drain throughly (I use a plastic colander)

  • Step 3: In a large pot combine sugar, vinegar and spices bring to a boil, add cucumbers, onions and peppers and bring back to a boil simmer 5 minutes.

  • Step 4: Pack into sterilized pint jars, cover with hot brine and seal.

  • Step 5: To Process- adjust lid,place in a boiling water bath for 5 minutes counting process time as soon as the water returns to a boil.
