Ingredients

The ingredients are:
  • 1 tablespoon oil (vegetable or olive oil)
  • 90 grams bacon (3 rashers, rind removed and coarsely chopped)
  • 1/2 cup all-purpose flour (plain)
  • 1 1/2 cups milk
  • 4 large eggs, at room temperature
  • 60 grams butter, melted
  • 1 can (210 gram) whole kernel corn (drain and rinsed)
  • 3/4 cup cheddar cheese, grated
  • 1/4 cup cheddar cheese, grated
  • 3 green onions, thinly sliced (plus 1 extra shredded)
  • 2 tablespoon parsley, chopped
  • Mixed salad leaves, to serve

How to Make

  • Step 1: Preheat oven to 180C/160C fan forced.

  • Step 2: Grease a 1.25 litre (5 cup), 24cm (top measurement) pie plate.

  • Step 3: Heat oil in a frying pan over moderate heat and add bacon and cook and stir for 3 minutes or until crisp.

  • Step 4: Sift flour into a bowl and make a well at the centre.

  • Step 5: Whisk milk, eggs and butter in a jug.

  • Step 6: Add milk mixture to flour, mix well and then add bacon, corn, cheese, onion and parsley and mix well and then spoon into prepared dish and level the surgace and top with extra cheese.

  • Step 7: Bake for 50 minutes or until just set at centre and then let stand for 5 minutes and top with extra onion.

  • Step 8: Serve with salad leaves.
