Ingredients

The ingredients are:
  • 30 grams butter, soft
  • 10 eggs yolks (use whites to make a pavlova or friands)
  • 1/2 cup caster sugar
  • 300 ml coconut milk (as most cans are 275ml add a splash of milk)
  • 3/4 cup desiccated coconut
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Use the butter to heavily grease the moulds and then lightly dust them with a little extra caster sugar.

  • Step 2: Lightly beat together the eggs yolks, sugar, coconut milk, coconut and vanilla and pour this mixture into the moulds.

  • Step 3: Place them in a baking dish into which they neatly fit and pour around some hot water to come halfway up the sides.

  • Step 4: Bake in a 180C oven until they are golden brown and firm to the touch - about 35 to 40 minutes.

  • Step 5: Chill for 2 to 3 hours.

  • Step 6: To turn them out, run a knife around the sides and tip them out on to a serving plate.

  • Step 7: Serve with seasonal fruit and cream if liked.
