Ingredients

The ingredients are:
  • 1 sliced (8.75 ounce) baguette bread (15 or so slices, cut on the diagonal)
  • Extra virgin olive oil for brushing (approximately 1/4 cup)
  • 1 garlic clove, peeled and cut in half
  • 224 grams ricotta cheese (fresh, 1 cup)
  • Arugula (15 leaves)
  • 1/4 pound prosciutto ham (or other salty, cured pork meat such as coppa, lomo or speck)
  • Olive oil (Best quality oil, for drizzling, about 1/8 - 1/4 cup)

How to Make

  • Step 1: Heat grill or grill pan to medium-high.

  • Step 2: Place sliced bread on a sheet pan and brush both sides with olie oil.

  • Step 3: Grill bread until golden all over, about 2 - 3 minutes per side. Rub one side with garlic clove.

  • Step 4: Spread 1 or 2 tbsp ricotta on each slice, then press an arugula leaf into cheese.

  • Step 5: Place a slice of prosciutto or other cured meat on top, and drizzle with olive oil. Serve.

  • Makes about 15 hors e'oeuvres.
