Ingredients

The ingredients are:
  • 2 cups whole kernel corn (fresh corn, about 4-5 corn cobs or canned corn)
  • 1/2 cup granulated sugar (for sweet version)
  • 1/4 cup Maseca Instant Corn Masa Flour
  • Maseca, or other brands, are usually available in all large supermarkets, Hispanic foods aisle.
  • 2 large eggs
  • 2 tablespoons butter
  • 1/3 cup milk
  • 1 tablespoon butter (to cook)

How to Make

  • Step 1: Combine all the ingredients except the butter in a food processor and blend until the mixture is crumbly.

  • Step 2: Melt butter in a frying pan. Drop batter into round pancakes and cook for about 2 minutes. Turn over and cook for 2 more minutes.

  • Step 3: Serve warm. You can top with sour cream or Mexican crema.
